Before you begin

You can also go back to the main screen of the Notes app and tap on "Lock Now" at the bottom (like you did before) to lock all unlocked notes at once.
To remove password protection entirely from a note, swipe on it like before and tap on the gray lock icon again.
You'll be asked to use Touch ID or enter in the password to verify (just like if you were unlocking a note to view it), but after that the note will now be completely unlocked for good.
Keep in mind that if you sync notes across your various Apple devices using iCloud, locking a note will also lock it on your other devices, and vice versa.

How Password protect notes on iPhone
Creating password-protected notes on iPhone involves two steps. i.e., creating a master password and creating notes with a password.
Step 1: Create Master Password for Notes
Before creating Password protected notes, you need to set a master password for notes.
Go to Settings. Scroll down up to Notes.
Tap on Notes. You will see below screen.
Tap on Password. You will see options to enter your password and reenter the password and enter anything related to the password in the hint box. You can also enable Touch ID, if you want extra protection along with a password.

To lock a note, open the folder containing the note you want to lock, and swipe left on that note until you see three icons. Tap the lock icon.

An open lock icon displays next to the note. Initially, it's unlocked. To lock all notes you've chosen to lock, tap "Lock Now" at the bottom of the screen.

On the "Password" screen, tap "Reset Password".
NOTE: If you know your Notes password and you just want to change it, tap "Change Password". Then, enter your "Old Password" and your "New Password", "Verify" your new password, and enter a "Hint" to help you remember your password. The hint is not required, but it is recommended.
Enter your "Apple ID Password".

1. Start the Notes app.
2. Tap on one of the notes to open it.
3. Tap the Share button at the top right of the screen.
4. In the pop-up, tap "Lock Note," which has a padlock icon and should appear in the second row of icons.

4. In the pop-up, tap "Lock Note." It may ask you to enter your locking password.
5. After a moment, the lock button will appear at the top of the screen. To hide it, tap the button. Remember that if you hide any note, all the notes with locks will be hidden.
How to view a locked note in the Notes app
1. Start the Notes app.
2. Tap the note you want to view. If it's hidden, you'll see a screen that says the note is locked. Tap "View Note."
3. If you have Touch ID or Face ID enabled, unlock the note that way. Otherwise, enter the master password.
4. When you view a hidden note, this unhides all the notes, so you will need to hide the note again when you are done if you want to continue to keep it private.

Apple pushed out its iOS 9.3 update Monday, the release that brings the long-awaited "Night Shift" feature to iPhones and iPads. But other iOS features are getting some much-needed attention, too.
Notes, an often overlooked app, also has a handy new trick: the ability to password-protect individual notes.
While adding a password to your daily to-do list might seem unnecessary, there may be some notes you don't want anyone who picks up your device to be able to see. While it's never a good idea to store sensitive personal information — like account numbers or passwords — in an easily accessible place (we recommend using a password manager, like LastPass or 1Password), adding an extra layer of security to your day-to-day notes is definitely a useful feature.
Now, adding a password to your notes is easy, though there a couple important points to keep in mind.
You can add a password to any new or existing note in the Notes app from the share menu by selecting "Add Password." If it's the first time you've used this feature, you'll be prompted to create a new, unique password on the next screen.
This password will apply to all the notes you protect, not just this one. Additionally, the password should be different from the one you use with your Apple ID (you can add a hint to help you remember) and you can also choose to enable Touch ID for added security.
You can see which notes are protected by the lock icon that appears under the note's heading. Once you've set a password, notes will still appear "unlocked" until you close the app or restart your device. It's important to remember, however, that the first line of the note will always appear — even when the note is "locked" — so you may want to avoid putting any sensitive information at the top of a note.
Once you've unlocked a note — either with Touch ID or your password — you can share and edit your notes as you normally would.
